Quebec chefs to represent Canada at the most prestigious pastry competition on Earth

Meet your NEW Team World Pastry Cup Canada 2025

Montreal, April 12, 2023 — After 15 years of absence on the international pastry scene, Canada made a come back last January by ranking in the 10th position and winning the eco-sustainability award at the World Pastry Cup, an international event that represents all aspects of the professions from ice cream to chocolate making. Today, on the Garland Stage at the Restaurant Canada Show, four aspiring pastry chef battled for the privilege to represent their peers at the next global event in Lyon (France).

Under the eye of the country’s leading industry professionals including Chef Nadege Norian (Nadege), Chef Rodney Alleguede (Goûter by RA), Chef Daniel Garcia (Team Canada 2023) and Chef Stephane Brunelet (Team Canada 1991, bronze medal winner, the only team to ever make it on the podium at the Oscars of pastry), contenders went head-to-head in a series of drills that included the making of a chocolate entremets and the creation of a sculpture using Valrhona chocolate. Renowned Montreal pastry master, Chef Olivier Potier (Chez Potier) and Chef Christophe Sportellini (Pastry chef at Nani Nono in Val-des-Monts, QC), won the right to be called our national culinary athletes.

“I’m excited by the new team,” explains Team President Chef Daniel Garcia who led the last team in France. “Now that we know the ins and outs of the competition, the world better watch out for Team Canada 2025! I just can’t wait to start training with these two chefs.”

THE NATIONAL PASTRY TEAM
This past July, weeks before the semi-finals in Chile, Chefs Canada announced the formation of a national pastry team for the first time in over 15 years. Though they only had a few short months to train at the National Training Center at Montreal’s ITHQ, they ranked 5th in Chile and won the only wild card given by the international jury to make their way to the most prestigious stage for pastry art on the planet. There the trio made us proud by ranking 10th and winning the eco-responsibility award.

“The national pastry team is the sweet counterpart of Bocuse d’Or Team Canada. Competing on both stages helps position our country as a culinary destination for discerning tourists worldwide. We’re proud to help our producers to have a voice in an industry that showcases innovative techniques, incredible ingenuity and out-of-the-box thinking,” adds Thomas Delannoy, President of Chefs Canada. “We’re also thrilled to see candidates working together with our board of advisors to (finally) step on the podium in 2025.”

ABOUT THE COMPETITION 
The competition was created by the legendary Chef Gabriel Paillasson over 30 years ago. Currently chaired by Pierre Hermé, it brings together teams from all over the world, to first compete on one of the five continents to win their spot amongst the best of the best in Lyon
(France) every two years.
