Montreal steals the World Pâté Croûte America Championship to NYC

Montreal, September 12, 2022 — Chefs Canada is thrilled to add to its roster of international culinary events the production of the American pre-qualifiers to the 13th edition of the World Pâté Croûte Championship. Typically taking place in NYC, the event will be hosted at Hotel Place d’Armes in Montreal for the first time this October. Created in 2009, the international competition will be bringing to La Belle Province top chefs from all over South and North America to compete for one of two chances to make it to France for the international event this December.

Considered the ultimate test for a chef, pâté croûte is a traditional delicacy known as one of the most technical dishes of French gastronomy. The masterpiece of French cuisine amalgamates the skills of a butcher, baker and cook to create a pie filled with meats, vegetables, aspic, herbs and spices, a process that takes two days to prepare. While recipes and ingredients vary regionally, the dish is usually comprised of layers of various meats including pork and game and other fillings – aspic used to glue each layer together – all encased in a decorated, puff pastry crust.

Hosting the World Pâté Croûte Championship is another step in that direction.”

 

Bringing the competition from behind closed doors to Montreal foodies.

Because the event is exclusively reserved to food industry professionals, Chefs Canada is launching a festival where gourmets and gourmands will be able to taste the creations of some of the city’s best chefs. Many Montreal restaurants and butcher shops are expected to participate in the first annual Pâté Croûte Fest. Taking place from October 7 to the 17, the event will showcase the creations of chefs throughout the city but will also allow locals to buy the festival’s official pate made by Chef Gregory Faye, winner of the 2021 elegance prize at the competition in France.

About the Competition

This unique global competition is designed to help preserve a century-old culinary tradition. Organized by Arnaud Bernollin, Audrey Merle, Gilles Demange and Christophe Marguin, this year’s event will be overseen by Pierre Hermé, the King of modern patisserie who is often referred to as the “Picasso of pastry”. The Montreal American semi-final will take place at Hôtel Place d’Armes (Corner Collection Group) and will be judged by a remarkable jury consisting of some of the world’s most awarded chefs and Meilleurs Ouvriers de France including Guillaume Gomez, Frederic Cyr, Jean-Marc Guillot and Robert Sulatycky (ex-Bocuse d’Or candidate in 1999). “The World Pâté Croûte Championship has become a major gastronomy event with international appeal”, explains Arnaud Bernollin, Co-founder of the Championship. “Given the upcoming ban on foie gras in New York, we are thrilled to bring the Americas selection to Canada to elect two finalists to France in December.” Chefs and foodies will be able to watch live on the championship’s social media channels for the first time in history.
